Beer Focus: Wiper & True – Festival Saison

If you are into Craft Beer then you have probably come across Wiper & True. As with most breweries, they formed out of the love of brewing in its rawest forms, trying different ingredients and seeing how the end result will turn out. Doing this saw them outgrow their home brewing environment and operating out of two production sites. Both having their own uses, the first is the brewery they built on St. Werburghs, Bristol which concentrates on their core range of beers, as well as hosting their taproom.

The second site at the Barrel Store is where the exciting stuff happens in their mixed fermentation and wild yeasted ales. This site also houses their barrel-aged projects which I’m sure are going to be glorious.

Within this month’s Brew Republic premium box, I was delighted to see this Festival Saison brewed in collaboration with Bristol Craft Beer Festival.

This Saison has everything you look for in this style, it’s fruity and a hint of spice on the aroma, you could even add that it has the typical farmyard scent you usually find in these styles of beers.

Pouring into the glass the hue is a pale orange with a long-lasting, dense, rocky white head resulting in sticky lacing on the glass as it fades. Clarity is hazy but haze is not unexpected in saisons due this style mainly being unfiltered.

The flavour was oozing with citrus fruits, spice to grainy flavours coming from the malt. I really enjoyed the bitterness and mouthfeel of this, the bitterness was very crisp and refreshing to drink making it very quaffable if I had more in the fridge.

Overall, I was thoroughly impressed, sure I don’t drink Saisons all the time but when I do get the opportunity to try them I always enjoy the abundance of flavours and can appreciate the craftsmanship.

I would definitely sit this alongside some grilled fish or seafood, with the notes of lemon, honey will be perfect.
